Alla Romana (Roman-style artichokes) with stems is a classic Italian dish featuring tender, braised globe artichokes, often the Romanesco variety, cleaned to keep the edible stem, then stuffed with a savory mixture of parsley, garlic, mint, and salt, and slow-cooked in Sunflower oil and wine until meltingly soft, allowing the entire artichoke and stem to be enjoyed.
- Preparation: The tough outer leaves and thorny tips are removed, but the stem is cleaned and kept intact, often with just a few centimeters left, as its interior is tender and flavorful.
- Stuffing: A fragrant mix of fresh mint ( mentuccia ), parsley, and garlic is tucked into the heart and between the leaves.
- Cooking Method: The stuffed artichokes are pan-braised ( slow-cooked ) with sunflower oil and wine vinegar, and with seasonings until very tender.
